Capture the Sun on Fabulous; it’s Friday!

 A double soup of roasted tomato with basil and roasted squash with ginger and coconut milk.

Sun soaked vegetables drizzled with olive oil and roasted until sweet and sticky, make fabulously quick and easy soups. Simply blitz in a blender and mix with vegetable bouillon. and voila!

As the summer takes on an Indian air and the days are hot, why not try something new and serve a chilled double soup?  Simply pour two different soups into a bowl simultaneously and watch the colours flow. Tasty, vibrant and a great conversation piece!

  1. That’s so pretty! What a great idea for combining flavors and making a visual statement. I guess it would work with hot soups, too, right? It’s gotten very chilly here and that has me thinking about ways to warm up!

  2. Roasting the vegetables before blending them must give it a rich taste. Tomato and basil I have tried but never roasted and with roasted squash with coconut and ginger. That sounds delicious. Have a great weekend!

    • All I do is put tomatoes, basil, onions and lots of garlic in a roasting pan with salt and pepper and I drizzle the whole lot with olive oil. I leave all the skins on the onions, garlic and tomatoes. When it is roasted I let it cool then remove the outer onion skins before putting in a processor. I then push the mixture through a conical sieve and add some stock to get it to the right consistency. Because the vegetables are not boiling away in stock, the flavour and colour is intense. I do the same with squash, carrots or any veg.It is easy and natural; easy cooking! I am so glad you like it!

  3. Amazing. I wish i like to cook. My daughter does & for that i am very lucky. You made two soups & then combined them. To have the love & passion for cooking is clear in the evidence of the photograph. I do, however, have a passion for great food. Perhaps I should offer to clean up after you in exchange for food & shelter? 🙂 ~amy
